The lime is a citrus fruit that belongs to the Rutaceas family. This group contains some 1,600 species.  The genus citrus is the most important of the group and has 20 edible sub-species, all of them very rich in vitamin C, flavonoids and essential oils.

 

Lime has a very dark green skin and the pulp, which is divided in segments, is pale green. The lime is juicy and has a delicate aroma. Usually it does not have seeds. Frudiva uses the Tahiti variety.

 
Lime is used to give food a certain acidic flavor. It helps also to avoid the oxidation of fruits.
 
Lime contains vitamin C, citric acid and potassium. Lime is also a good disinfectant and astringent.

• Powdered fruit
